Followers of Gordon Ramsay`s F Word may have seen Seiya Nakano in the
current series where he was teaching Gordon about sea urchins. His
passion is for his Japanese cooking but he also had a classical French
training and has worked in restaurants in France including Pavillon
Ledoyen (Michelin three star). Much of his earlier work was in restaurants
in Australia
where he revelled in fusion food. He is a leading exponent of sushi
(he runs his own company O`Sushi in Dublin)
which will be an important element of this one day course. This is a
chance to master new ingredients and stunning presentation.
On the day, apart from fish and vegetarian sushi, he will be showing how to
make miso soup, teriyaki chicken and fillet of duck with Japanese sabayon
sauce. Yummy.
